Pit Master Stefan, of Charlie's Texas BBQ, begins the cooking process with an uncomplicated rub so as not to distract from the flavour of the meat, then lovingly smokes the brisket and pulled pork for 16 hours on a bed of oak and pecan, which results in a juicy, melt-in-your-mouth culinary delight. Be careful as it is highly addictive!
